ULMO (lat.: Eucryphia cordifolia) HONEY
is a speciality of the Valley from a large evergreen tree, which can grow up to 40 metres and more. It is typical of the chilean Valdivian rainforest and only found from latitude 37° to 43° S, especially in the wet costal cordillera from sea level up to 700 metres. The Ulmo tree blooms into lovely white flowers between the end of January and March. (See picture above) These flowers, so abundant as to make the tree appear covered in snow, are pollinated by bees that use the nectar to produce miel de Ulmo, a speciality of north Patagonia.

MURTILLA (lat.: Ugni Molinae) JAM
The murtilla or Murta berries are delicious fruits from a wild growing bush only found in the South of Chile. It has a sweet, slightly perfumed flavour to compare
with wild strawberries. These small red berries only grow in the Lake District on the lower slopes of Volcán Osorno, as well as in and down South the Cochamó Valley. This delicious jam is a speciality and a 100% natural product of the Cochamó Valley.

QUINOA (lat.: Chinopodium quinoa)
Quinoa is an ancient grain originated in the Andes of South America. Quinoa cam be served hot like rice, but is also a perfect grain for summer salads. It is a translucent dish with more calcium, iron and protein than wheat and is gluten free. Preparation: After having rinsed quinoa under running water, pour into boiling water (twice as much water as quinoa), turn off the flame and cover the pot. It cooks itself, ready in about 15 minutes or less; it can be served like rice, a lot of other dishes are possible.
